I create field but if i don't went this field show all category.
It possible that field show some category

I have 2 category land and house
I create new text field name floor for category house and need show for this category only but don't need to show in category land.

you can simply by duplicate template and assign template with and without to each category

you can add add in form in type administration for Front End and Back End

do you mean you, that you want your items to be allowed in specific categories ?

- then yes you can do it "per type"

1. Go to type manager and edit 1 of the types
2. Go to authoring TAB and select a category to be used as ROOT of the allowed categories of this type

NOTE: there is a parameter to disable this category and only allow sub-categories to be selected
