in which flexicontent file do i have to declare those values to be used (if i put them in flexi template i'll be probably to late to be declare) ??

If you call the above code any previous assignment will be overwritten, so you can call them inside your template file, e.g for item layout you can call them inside the item.php of your FLEXIcontent template
