How I can disable that by clicking on the picture of an item is listed the gallery with other pictures of other items?

mmm, i am not sure i understand you, you want to click on which picture, on an image field and display what?

we have the item view that display items (= joomla article with extended data) and category views that list the items

FLEXIcontent image field has a parameter called (in English) "Use popup", (scroll down to find "Display Options"), there you can disable it totally, or select to disable it only in category or item view

ALSO you can select to link the image thumb to a URL, the URL is specified when you edit the item
