My audience is largely North American and would look upon this as a misspelling. How do I change it?

Edit the language files.

After installation, the file you want is here:
joomla_root/language/en-GB/en-GB.com_flexicontent.ini

Restrict your search/replace to match the case and it goes rather quickly.
Just don't touch the all UPPER_CASE stuff.
