Hello

a solution you can use now
that is even more flexible
is

to duplicate the existing value layout of the field
and create a custom layout for the field , where you can customize the output

But the option is before the template. The separator is added in the tex.php not in the template.

Hello

you do not have to use what is created before the layout

you can ignore it and use what you fits your needs

Hello

a simple solution is to use CSS

use prefix
<span class="somename">

use suffix
</span>

and style to add e.g. a custom border at the right but exclude
last-child (via CSS)

About changing the current behavior,
- we could make it that it uses spaces instead of &nbsp;
- plus maybe add option for custom separator, since the closing+opening option does not cover the case we want to avoid the closing text after the last value
