Hello

yes you can

Component configuration (inside 'Category views' TAB)
or in Category configuration (this will effect configuration of sub-categories)

Items List TAB
Basic display, Ordering TAB
'Order by (CORE field/properties)' Parameter

select ordering
either: Random per session (pagination usable)
or: Random per view (pagination not usable)
