Hello

do you mean you, that you want your items to be allowed in specific categories ?

- then yes you can do it "per type"

1. Go to type manager and edit 1 of the types
2. Go to authoring TAB and select a category to be used as ROOT of the allowed categories of this type

NOTE: there is a parameter to disable this category and only allow sub-categories to be selected

example
field floor for category hours only and not show in form to other category

Yes with custom template ans little PHP
The more simple is to use type ans asign field to each
