I dare not install the new version, perhaps with more time later.
Now I would like to change the text "Title of article" "Establishments" Is it possible?

Actually, the bug fixes are too many !!! plus big performance improvement for category views with a lot of items, so i would suggest you upgrade.

Only thing you should note is that standard templates are overwritten when you upgrade (you should never modify the, instead you should duplicate them before altering them)

If you have do output fields manually in you category layout there is a global performance option called "Always create field html" that you can set to always.

About what you asked, open template file:
category_items.php
find text:
<?php echo JText::_( 'FLEXI_ITEMS' ); ?>
and change to e.g.:
<?php echo "Establishments"; ?>

NOTE you should:
1. duplicate the template as establishments_tmpl
2. make the change
3. assign fields to the category layout of your template
4. edit your categories to set "establishments_tmpl" as template (configure one category A and then use button "copy parameters" to set all other categories to have all parameters same as category A)
