Look at the label of one of the fields "select". The label indicates to which category the data selected in this field must be related.

What I need is that, when one item is saved, the data chosen in the "select" which is labeled "Daniel Fernández Rodríguez" will be available only to users who have permission to access the sub-sub-category "Daniel Fernandez Rodríguez "
The data chosen in the "select" which contains the label "Lucia Castro Gómez" will be only available to users with permission to access the category "Lucia Castro Gomez."

1. Item view
2. Category view (Table Layout / Blog Layout)

or you mean editable in some way ?

Viewable and not editable.
Viewable by a item of menu of type "flexicontent category".

The site is to a school, where several teachers put data from their students.
Students and parents should have access to see the information of the teachers.
What I mean is that there is an intersection of data.
Any student should be able to see the data sent over him by different teachers
For this reason I do not think it works by several templates.
There are 4 different types of information and for this I have created four templates: Evaluations, events, training materials, communications.
